Do you have a bunch of random vegetables in your fridge dying to be used? We all do it, we buy vegetables with no plan on how to use them, and then they end up in the trash. Sheet pan meals are by far the easiest way to use up those vegetables. Let’s solve this waste issue, while making healthy meals!

Go-To Sheet Pan Meals
I have a couple sheet pan meals that are my go-to’s but really your options are pretty endless!
Chicken Fajitas
Slice up your onions and peppers and chicken breast into strips. toss in a bowl with some olive oil and fajita blend seasoning. Lay everything out flat on a sheep pan and cook at 400 degrees for 20-30(ish) minutes or until the chicken reaches 165. Serve in a tortilla or over rice!
Sausage and Veg
Cut up your vegetables and kielbasa/sausage, all about the same size. Put everything in a bowl with some olive oil and seasoning of your choice! Mix everything up and lay it all out flat on your sheet pan, cook in the oven at 400 degrees for 20-30ish minutes! You’ll want all of your vegetables to be soft. I like to use precooked meat for this to make it even easier.
I usually use bell peppers, red onion and broccoli. But again you can use whatever you have!

Pick from each category for a healthy dinner!
Tip: vegetables like carrots and potatoes generally need a little more time, so it will be helpful to cook those for a few minutes before everything else if you’re also planning on using a veggie that cooks faster. But you can still use the same pan for easy clean up.
Protein: Pick 1
- Chicken (thighs or breasts)
- Chicken Sausage
- Turkey Sausage
- Kielbasa
- Shrimp
- Steak
- Tofu
Vegetable: Pick as many as you’d like
- Peppers
- Onions
- Broccoli
- Green beans
- Carrots
- Asparagus
- Cauliflower
- Brussel sprouts
- Tomatoes
- Squash
- Chickpeas
Carb: Pick 1
- Potatoes
- Sweet Potatoes
- Quinoa
- Rice (brown or white)
- Tortilla
When doing sheet pan meals this way, pick things you like and think would taste good together! Cut everything up about the same size, toss in a bowl with olive oil and your choice of seasoning and cook in the oven at 400 degrees for 20-30 minutes checking on and off for done-ness. You’ll want to make sure your meat is cooked to the correct temp, here’s a good chart for what temperature to cook your meat to. You’ll want your vegetables to be soft or even a little crisp if you prefer!
You could also make these recipes in an air fryer, this is the one I use, you’ll want one with plenty of space for all the ingredients!
Seasoning with these recipes is KEY, seasonings and rubs will help add a lot of flavor and keep the meal low calorie. I love using Kinders seasoning blends on everything! You can find them online at amazon or most grocery stores!
